'Green Stock'

'Green Stock' is basically vegetable cooking water. I'm begging you not to throw it away! It is full of nutrients and taste and makes a great base for soups, sauces, risotto, casseroles - everything really! You can 'intentionally' make 'Green Stock' by just boiling upand draining all the 'off cuts' of your organic box vegetables and throw some onion in too! Use cabbage and Kale stems, and leaves, pea pods, cauliflower leaves, and more. Add carrot trimmings too. Avoid using starchy vegetables though such as Potatoes and Parsnips. Keep old milk containers for storing your Green Stock' in the fridge or freezer.
