Ceri's Burgers

I sent my step-daughter Ruth to Uni with this recipe - and she cooks them for her house mates - no greater accolade needed! Take an onion or two from your box and chop finely, throw into a large bowl with lots of organic steak mince add some crushed fresh garlic from your box and add a nice big free range egg, add some freshly chopped tarragon, salt, pepper and a big handful of grated parmesan cheese. Mix everything together well. I leave the mixture covered over in the fridge for a few hours for the flavours to infuse the meat however you can make the burgers straight away and they still taste great! Either shape the burgers yourself using the ultimate hand tool ie: your hand or press the mince into a scone ring if you like things nice an neat!!. Put the burgers on a greased grill rack over a baking tray and then put them into a hot oven ... cook for about 30 minutes or until just cooked through and nicely browned. Sometimes I put a slice or two of cheese on the top of each burger for the last few minutes of cooking - just until it melts. Stuff the burgers into a big tasty fresh bun with lots and lots of Mark's salad bag mixed leaves, mayonnaise or bearnaise sauce or maybe tomato sauce. You will never buy a ready made burger again ... ever!!
