Green Burgers

Stuff one in a burger bun ... great as a vegetable dish or starter, delicious with a dip or topping - especially melted cheese! Grate a few courgettes and scatter them with a little salt and toss them around. Cover and leave them in a sieve or colander for about half an hour to let any excess liquid drain away. Tip the courgettes into a mixing bowl and add a large egg, a finely diced onion, some crushed garlic, a handful or so of fresh breadcrumbs, some grated parmesan, freshly chopped flat leaf parsley or any herbs you like really. Season with some freshly grated nutmeg and a little more salt if you need it and lots of black pepper. Mix everything together really well so you have a firm 'mince'. Shape the 'burgers' using your hands or press the mixture into a scone ring. Fry gently on a low heat for about 5 minutes each side, turning them gently once and cooking until lightly brown and crispy. Alternatively you could put the little burgers onto some baking parchment on a tray and brush them over with olive oil and bake them in a hot oven - that works too!
