The Sweet and Sour Spinach My Son Would Eat Every Day!

So easy! Wash and chop your spinach, including the stems - waste non of it. Heat some good olive oil and a nutmeg size piece of butter in a large pan and stir fry the spinach. Scatter a heaped palm full of ground almonds into the spinach and toss the mixture around for a while. When the Spinach has wilted and 'shrunk' add some sea salt and freshly ground black pepper, then a big splash of sherry vinegar, let it bubble and then add a big blob of Creme Fraiche. Cook gently for a few minutes. Spoon the mixture into a warm bowl and just eat it with a heap of hot bread. If you can wait long enough .... you could also serve it with any grilled or BBQ'd fish or meat.
